We are looking for a passionate Executive/Head Chef to lead the launch of POCO, our new pizzeria and bar concept. POCO will be a lively, modern space serving exceptional pizza in a social, inclusive atmosphere. Expect collaborations with guest chefs and bartenders, live music nights, DJ sessions at the bar.

You'll bring this dynamic concept to life in the kitchen, championing POCO's vibrant culinary spirit while also embodying Miiro's thoughtfully personal approach to hospitality. With Miiro Spittelberg opening soon, you'll play a key role in shaping a dining experience that truly reflects its neighborhood.

As our Executive/Head Chef we want you to
  • Lead the full culinary pre-opening setup of poco in collaboration with the Cluster F&B Manager.
  • Build and execute a culinary concept that reflects poco's vibrant personality: handcrafted pizzas, creative small plates, and a breakfast experience that feels generous.
  • Design kitchen workflows, recipe structures, production systems and plating standards that allow for consistency, speed and personality.
  • Manage food cost, forecasting, ordering and inventory with accuracy and ownership; ensure transparent reporting.
  • Recruit, train and mentor your culinary team, inspiring them to deliver food that feels honest and flavour-forward.
  • Maintain full compliance with HACCP, hygiene and safety standards; provide continuous training so the team can thrive.
  • Collaborate closely with the Restaurant Manager and Front of House teams to deliver a perfectly coordinated guest experience from breakfast through late evening.
  • Engage with local producers, bakers and culinary partners to build authentic relationships that enrich poco's offering.
  • Work with Marketing to activate poco through guest-chef collaborations, pop-ups, community dinners, live music, DJ sets and neighbourhood partnerships.
Your profile
  • Strong knowledge of pizza culture, dough preparation, mediterranean flavours and modern casual dining trends.
  • Several years' experience in similar roles required or eagerness to advance to elevate your career to the next step.
  • Experience in breakfast operations, ideally within hotels or high-volume venues.
  • A calm, solutions-oriented approach - even in the busiest service moments
  • A hands-on leader who trains by example and builds an inclusive, supportive team environment.
  • Flexible, adaptable and energised by launching a new concept from the ground up.
  • Experience with new openings or concept development is a plus.
  • Fluent in German and English.

We offer a competitive salary aligned with your experience and qualifications. The legal basis for this role is the collective bargaining agreement for the hotel industry in the state of Vienna, which stipulates a minimum monthly salary of €2,699. Your actual salary will be discussed in person but will exceed this by plenty depending on your education and professional experiences.
